In this post, we’ll guide you through an easy recipe that is guaranteed to impress your guests. By the end, you will have mastered layers of coffee and cream, topped off with a graceful dusting of cocoa powder. Let’s jump in!

Ingredients

Before diving into the recipe, let’s gather our ingredients. For an irresistible tiramisu, you will need:

  • 1½ cups espresso or strong coffee, at room temperature

  • ¾ cup dark rum, divided into two parts

  • 16 ounces mascarpone cheese (approximately 452g)

  • 6 large egg yolks

  • ⅔ cup granulated sugar (approximately 133g)

  • 2 cups heavy whipping cream (approximately 480ml)

  • 2 teaspoons vanilla extract

  • 40 ladyfingers (about two packages)

  • ⅓ cup unsweetened cocoa powder (approximately 33g)

Have everything measured and prepared to ensure a smooth mixing process.

Preparing the Coffee Mixture

Begin by preparing your coffee mixture.

In a medium bowl, blend the room temperature espresso with ½ cup of dark rum. This step is crucial, as letting the coffee cool slightly prevents the ladyfingers from becoming too soggy. The ideal soaking period for the ladyfingers is about 2 seconds.

Making the Mascarpone Mixture

In a large mixing bowl, combine the mascarpone cheese and the remaining ¼ cup of dark rum.

Using a hand mixer on medium speed, beat the mixture until it’s creamy and well combined. Set this aside while you work on the egg yolks.

Whipping the Egg Yolks

For this process, a double boiler is essential.

Combine the egg yolks and granulated sugar in the top of your double boiler. Whisk the mixture until smooth. Heat about 2 inches of water in the lower pot to a simmer, ensuring that water does not touch the bowl above.

Place the egg yolk mixture over the simmering water, whisking constantly for about 5 to 8 minutes. You’ll know it’s ready when it turns light yellow and slightly thickens.

Once whipped to perfection, pour this mixture into the mascarpone bowl and mix thoroughly. Cool this combined mixture in the refrigerator for about 15 minutes.

Whipping the Cream

In a separate, large bowl or the stand mixer with the whisk attachment, combine the heavy whipping cream and vanilla extract.

Beat on medium speed until stiff peaks form, which usually takes around 3 to 5 minutes. Avoid overbeating, as this can make the cream grainy. The perfect whipped cream should hold shape but remain smooth and glossy.

Combining the Mixtures

Gently fold the whipped cream into the mascarpone and egg yolk mixture.

This step is crucial; a gentle touch ensures the mixture stays light and airy. The final filling should look fluffy and creamy.

Assembling the Tiramisu

Now, it’s time to assemble your tiramisu!

Begin by dipping each ladyfinger quickly into the coffee mixture to soak them just enough—avoid soaking them for more than 2 seconds.

Arrange a single layer of ladyfingers in a 9×13-inch dish. Make sure there are no gaps, creating a solid base.

Next, add half of the mascarpone mixture, smoothing it to cover the ladyfingers. Then, repeat the layer with more dipped ladyfingers followed by the remaining mascarpone mixture. Use an offset spatula to ensure even layering. Finish by dusting the top generously with cocoa powder.

Refrigeration: The Secret to Success

Before serving, allow your tiramisu to chill overnight in the refrigerator.

This step is essential—it lets the flavors develop and helps the dessert set. Skipping this could result in a delicious but messy presentation.

Final Thoughts

This decadent tiramisu recipe is bound to impress your guests with its rich flavors and stunning layers.

Once you’ve got the hang of it, consider experimenting with flavors. Adding a touch of orange zest or a sprinkle of cinnamon can give your tiramisu a delightful twist.

Serve this classic Italian dessert at your next gathering. Watch your friends and family dive in with joy.

Enjoy every sweet moment, and don’t be surprised if they ask for seconds!
